Most people on a gluten-free diet settle into supermarket shopping fairly quickly. You learn the brands, you check the label, you move on. Restaurants stay hard indefinitely, because the information you rely on at home simply is not there: no ingredient list, no manufacturer, no allergen statement, and a kitchen you cannot see into.

Where the risk actually sits

A Columbia University team analyzed thousands of gluten tests that diners ran on restaurant food labeled gluten-free. Roughly a third came back positive, and the rate was worst for pizza and pasta — both above 50%. That pattern is informative: the problem is rarely the recipe, it is the shared equipment the dish passes through.

Ask about the cooking step, not the recipe

"Is this gluten-free?" gets answered from the menu, by someone reading the same line you just read. Questions aimed at the preparation step get answered from the kitchen, which is where the study suggests things go wrong:

The last one is a genuinely useful question. Where a sauce or dressing comes out of a packaged product, that product does have a barcode — and staff will often be willing to show you the container.

Every check returns a plain-language verdict with a confidence score attached — "Contains Gluten" at 95% confidence, say — plus the full list of allergens found. The confidence figure is there deliberately: it tells you how much weight the result deserves, which matters more for a photo of a plate than for a barcode.

The honest limit is worth stating. Photo analysis reads what is visible. It cannot see the oil something was fried in, a marinade that soaked in an hour ago, or flour dust on a work surface. It is a second opinion on a plate, not a substitute for asking about the kitchen.

Learning the names before you need them

The part that pays off away from the table is the built-in encyclopedia: 60+ allergens, each tagged HIGH, MEDIUM or LOW risk and listing its common aliases and cross-contamination notes. Gluten travels under a lot of names that never mention wheat, and recognizing them on a menu — or on a bottle the kitchen hands you — is faster than looking anything up.
